Weekly Favorites 11/24/19 to 11/30/19

Weekly FavoritesI hope everyone had a great Thanksgiving break! I took a mini vacation with the family and am just getting back in to it. Here are the Weekly Favorites, if only a day late!

Every Saturday, I go through Twitter with #foodblogger and find my favorite food related articles. These
are this week's favorites!

Spicy Chicken and Mango Salsa. A match made in heaven throw in some flour tortillas and you've got yourself a good night. 

I still can't get behind the instant pot craze. I've heard all about their many benefits. I just can't do it. It took me years to get behind the crock pot. All that said, this Italian Beef Sandwich looks pretty amazing!
I've always loved frosted gingerbread, especially around the holidays. These cupcakes may be something I'll have to make for the kids.


I realized that I talked about pizza last week, but let's be honest, I love pizza. There is no wrong to make it or eat it. As out in left field as this pizza may be, it looks damn amazing!

I have to admit, some days a quick avocado toast is just what I need for breakfast. Especially, with the perfect seasonings!

Have I told you about my potentially unhealthy love of carrot cake? I mean, it has carrots in it, so it's a little good for you right?

I really like this idea. It's an easy way to make a good appetizer for a party and something a little more upscale than say, chips.

There are no three flavors that were more meant to be together than chicken, lemon, and rosemary.

Every Saturday, I go through Twitter with #foodblogger and find my favorite food related articles. These are this week's favorites!

I always like restaurant reviews. They give a better insight to local fares for traveling than any travel guide can bring. While I don't have a trip to New Zealand planned at the moment, it's somewhere I've always wanted to go. This gives me something to plan around.

I've been trying to replace beef with chicken where possible lately. That means that I need new chicken recipes. A bonus of this recipe, is that it is all baked in the oven!

I would go to my neighbors' house when I was little and hang out for hours. They were a retired couple. Sometimes for lunch they would make us Sloppy Joes. Funny, those were the only ones I ever really liked. I'm interested to try out this vegan version.

I've always thought that fad diets were just that, fads. Most of the time, the latest trend isn't sustainable. Take Keto for instance. Is your diet sustainable, or is it just the latest band wagon?

I love spicy rice dishes. This looks like a dish I might make for myself on a weekend when the wife and kids are out of town, and I'm left to fend for myself!

I've tried to make my own hummus, and have failed miserably. This recipe just might be my ticket to success.

Two things stood out for me in this recipe. First, was the curry. As you know, lately I've been on a huge curry education binge. Second, this recipe is so different from anything that I've ever cooked. I'm always on the lookout for something new!


I was scrolling through Twitter, and I came across this post. As the old saying goes, it was the picture that stopped me in my tracks. Two of my favorites together. Olives and pizza! Pizza and olives! Olives on pizza!

There might not be anything better than the perfect baked chicken. The flavors in this simple marinade sound like they came straight out of my pantry. I'm definitely going to have to try this!

I don't normally eat quinoa, but I've got to be honest, and maybe it's the bacon talking, even the quinoa sounds good here.

I love chickpeas. They are extremely versatile. Salads. Hummus. I've never tried them pan fried though.

behind, that this is the Weekly Favorites from 2 weeks ago! Better late than never, let's get started!

I've always loved Greek food, I can't get enough of it! Can't wait to try out this lemon rice and lemon marinated grilled chicken!

I can't get away from curry! I'm still trying to find all I can about it! I haven't done a red curry yet, and this slow cooker red curry chicken looks and sounds amazing!

I'm going to be bold and say this may be the ultimate appetizer! What better way to make something that will please everyone than to combine cheese and bread? And, you don't need any extra utensils to serve it!

Have I told you about my cheesecake obsession? I went a while there in college looking for the perfect cheesecake recipe and would get mad if it cracked in the middle. We even had cheesecake at our wedding! I've been able to come to terms with cheesecake obsession, but I still love a good one!

Normally, when I see fried rice, it's chicken, beef, maybe pork, or vegetable. If there is shrimp or seafodd fried rice, it is usually a special. So, to see someone share a recipe for prawn fried rice is a real treat. I'll have to try to sneak this in to the menu someday soon!

Oven Roasted Chicken Parmesan with Blistered Tomatoes

Oven Roasted Chicken Parmesan
Chicken Parmesan, or Chicken Parmigiana, is an Italian-American dish, derived from Eggplant Parmigiana, which is prepared mostly the same way. At every Italian restaurant I go to, I see Chicken Parmesan on the menu, but I  almost never get it. The few times that I do, I'm disappointed. It's always prepared the same. A piece of chicken, battered in breadcrumbs, fried, and topped with a slab of cheese, served next spaghetti and marinara sauce. I knew there had to be a way to improve this, so I set out to find it.

The Recipe:

The Ingredients:

  • 4 Tablespoons Butter, Melted
  • 4 Boneless Chicken Breasts
  • 1 Cup Panko Bread Crumbs
  • 1 Cup Parmesan Cheese, Grated
  • Salt and Pepper
  • 1 Package Cherry or Grape Tomatoes
  • 4 Cloves Garlic, Minced
  • 2 Tablespoons of Butter
  • Olive Oil
  • Red Pepper Flakes (optional)
  • Pasta
The Method:

Preheat the oven to 350 degrees. Combine the Panko bread crumbs and cheese in a bowl with salt and pepper. In a separate bowl, coat the chicken breasts in the melted butter. Transfer each chicken breast to the bread crumb mixture individually to coat with bread crumbs. Lay on a greased sheet pan to go in the oven. Cook for 30 minutes.

In a large skillet, melt the 2 tablespoons of butter and add a tablespoon of olive oil over medium heat. Saute the garlic until golden. Add the tomatoes and season with salt and pepper. I like a little spice to mine, so I add some crushed red pepper flakes. It is important to make sure the heat is not too high here, because the tomatoes will burn and not blister, which is not we're looking for. Stir the tomatoes occasionally to make sure all sides are cooked. These will take about 15 to 20 minutes

Serve with pasta. I used penne, but any kind will do. If you want a little more cheese, sprinkle some additional Parmesan top.

At first, I wasn't sold on this cheesecake recipe. I'm a bit of a purest when it comes to cheesecake and the idea of a no bake didn't quite appeal to me at first. But then, two things struck me! The flavor combination of chocolate and coconut have been steadily growing on me. Also, my wife has been trying to avoid dairy, which means if I make a cheesecake at home, I'm basically baking for myself. Maybe that's not such a bad thing! So maybe, this no bake, vegan cheesecake could make for a compromise!
