Eggies in a Basket, or Egg on Toast

Breakfast is a great meal any time of the day, especially to get your day started. But some mornings, you just need something quick that you can run out the day with and get going. The Eggy in a Basket is a perfect portable breakfast food to take away with you. It’s simple to make and can even be made the night before.

Making Eggy in a Basket

The Tools

  • Biscuit Cutter
  • Brush
  • Skillet
  • Coffee Cup
  • Fork
  • Spatula

The Ingredients

  • Bread
  • Melted Butter
  • 1 Egg
  • Salt and Pepper
  • Avocado (optional)
  • Everything Bagel Seasoning (optional)

The Method

Start by putting the skillet on the stove over medium-high heat. Then, use the biscuit cutter to cut a circle in the middle of a piece of bread. This gives you a little snack to munch on while you cook.

Use the brush to coat both sides of the bread with butter. By now, the skillet should be hot enough to start to toast the bread. Place the buttered bread in the skillet.

While the bread starts to toast, get the egg ready. There are two ways to do this. You can either scramble to egg or leave it alone and have a fried egg in your basket. Either way, I like to use the coffee cup to add salt and pepper to my egg. And, I can be a little more exact when it comes to pouring the egg into toasted bread.

Pour the egg in the middle of the bread. There won’t be a lot of stirring required in this recipe. More watching than anything. Once the sides of the egg start to cook, it’s time to flip the toast over with your spatula.

Now it’s time to eat. You can eat it just like this, a buttery, eggy piece of toast, or you can get creative. If you like avocado, this goes great with avocado slices on top. Or, if you happen to have Everything Bagel Seasoning on hand, it goes great on this. A few other things you can try are ham, bacon, tomato, or spinach. Get creative. Honey Yogurt Breakfast Parfait

I've been trying to follow a healthier diet. I've been limiting portions and most importantly, sugar. So far, I've been feeling much better overall, though with maybe slightly less energy. I expect that will correct itself as I get used to eating less and eating healthier.

One of the ways I have set out this healthier diet is to make it more routine. I eat the same thing each
day for breakfast and snacks throughout the day. For breakfast, I have been sticking to yogurt parfait made of fresh fruit, yogurt, and honey.


The Tools

  • Mason Jar
  • Spoon

The Ingredients

  • Plain yogurt
  • Honey
  • Fresh Fruit

The Method

The night before, gather the fresh fruit and get it washed and cut up. At the bottom of the mason jar, add two or three large spoonfuls of yogurt. Add in about a tablespoon of honey. On top of that, add in your fruit. I have been sticking with fresh strawberries, blueberries, and raspberries. In the morning, stir everything up and enjoy.

Refrigerator Hash

This recipe is all about using ingredients you already have in the fridge. My wife and kids were out of town for the weekend. Typically, when I have the house to myself for the weekend, I go to the kitchen and create. This weekend was no different! It was morning and I was thinking about a diner style hash or scramble. I found what I was looking for in the fridge, and I was on my way!


The Recipe:

The Tools:

  • Whisk
  • Heavy bottom skillet
  • Medium Sized Bowl

The Ingredients:

  • Frozen Fries
  • 4 Eggs - Scrambled
  • Milk
  • Shredded Cheese - Cheddar or Monterrey Jack
  • Butter
  • Leftover Meat
  • Olive Oil

The Method:

First, some frozen fries, a handful is good, go into the hot skillet with a some olive oil. Let them cook until brown on all sides. Remove and set aside.

I had leftover over BBQ pork in the fridge. I chopped up some pork, maybe a cup, and threw it in the skillet. Remember, the pork was already cooked, so I just wanted to get it warmed up. After a few minutes, it was ready to remove and set aside. 

Now for the eggs. In a medium sized bowl, whisk the for eggs together. Add in a splash of milk and a half cup of shredded cheese. Whisk to combine. Add a few tablespoons of butter to the hot skillet. Once the butter melts, add the egg mixture. As the eggs begin to cook, add in the fries and pork, and sprinkle in some more cheese. Season with salt and pepper. When the eggs are done, you're ready to enjoy breakfast!

To mix it up a little, top everything some pico de gallo, chopped green onions, or BBQ sauce!

This has to be best way to do breakfast that I have seen in quite some time!

If your family is anything like mine, your gatherings revolve mostly around food. Having these bite sized, portable appetizers would be great at our next party!

Sugar, sugar, everywhere, especially in sauces. You'd be surprised at how easy it is to cut down on you sugar intake. 


My wife and I have eaten our way through Paris, but we haven't been through the rest of Europe. Maybe this is a sign that we need to plan a trip!

If you've been following along, you know I've never met a pasta I didn't like. Especially pasta with chicken and spinach, and usually some tomato and cheese mixed. Basically every ingredient found in this pasta bake. It's like we were meant to meat each other!

The combination of pasta and fish or seafood is almost legendary. Maybe it gets a bad rap because of the old tuna noodle casserole, but done right it can be a thing of beauty! This combination of the pasta, the tuna, and beans, sounds amazing!

Epic Bacon Burger - via Carly Bloggs

I think that at this point, you may have realized that I never met a burger that I sent away without eating it! Throw bacon into the mix and there's no way I'm saying no. Normally, I'm all about the grill. But for those of you who don't have a grill, this recipe demonstrates how to cook a burger stove top, which I find to be a suitable second option. There are of course some nights I am too lazy to go outside and fire the grill up.


Summer Tagliolini Pasta Recipe with Marinated Vegetables - via The Pasta Project

When I'm not chowing down on a burger, I turn to my Italian roots for food inspiration. I love a really simple pasta dish, where just a few ingredients can come together to make a dish full of flavor. This Summer Tagliolini recipe just that. The ingredients list is mostly vegetables, with a few others to enhance the flavors. This sounds amazing and should go perfect on a hot Houston, TX summer day!


Breakfast Casserole with Hash Browns, Sausage, and Eggs - via Mr. B Cooks

Without even looking at the article, the title of this post reminded me of the sausage and egg casserole my mom cooked every Christmas morning and still cooks every Christmas to this day. Diving in to it, the preparation is very similar. The key difference is the addition of the hash browns and the absence of bread cubes. The nostalgia alone, we enough to draw me in to this one!


Passion Fruit Eclairs with Italian Meringue - via Lil' Cookie

What drew me in to this one was the departure from what I think of as a traditional eclair. You know what I mean. I have never had an eclair that wasn't a pastry filled with either cream or custard, topped with chocolate. Not that I am complaining. Here, Lil' Cookie takes us away from that traditional eclair with the addition of fruit and a light meringue, perfect for summer!
