Weekly Favorites 12/22/19 to 12/28/19

Weekly FavoritesAs you may have guessed, last week was pretty busy with family visiting for the holidays. So, I decided to take the week off from the blog. This, week I'm back with a new Weekly Favorites to start!

Every Saturday, I go through Twitter with #foodblogger and find my favorite food related articles. These
are this week's favorites!

This week, it's all about cake!

Peanut butter and chocolate are a classic combination that were meant to be together. Look at that Peanut Butter Chocolate Cake!

I remember being somewhat of a gluten for Swiss Cake Rolls when I was a kid. This spice roll reminds me of a pumpkin roll my wife makes!

I've never seen a pizza cake before, but I think I'm in love!

I'm willing to overlook the fact that these are keto brownies, simply because the look amazing! Combining cheesecake and brownies is brilliant!

Weekly Favorites 11/10/19 to 11/16/19

Weekly FavoritesEvery Saturday, I go through Twitter with #foodblogger and find my favorite food related articles. These are this week's favorites!

Definitely the one on the left! Give me a charcuterie tray any day of the week!

That must be some damn good pie!

I typically go with beef, but these chicken nachos look amazing!

How fast do you want it eaten? Leave it my house and it will be gone in a weekend!

Weekly Favorites 02/24/19 to 03/02/19

Every Saturday, I go through Twitter with #foodblogger and find my favorite food related articles.
Weekly Favorites
These are this week's favorites!

It's been unusually cold here this time of year, making hot chocolate a must! Now making it a S'mores Hot Chocolate brings it to a whole new level!
I've written before about my cheesecake obsession. It was even our cake of choice for our wedding!  I'm always on the lookout for a new recipe to try!

Back in college, I used to make my own granola. It was sugar free, with honey and safflower oil. These refined sugar free granola bars make me want to try both!

I love steak with chimichurri sauce. Normally, when I see people put steak sauce on their steak, I cringe. But chimichurri sauce, that's different story.

If I haven't told you before, I have three kids at home. Making sure they don't have too much sugar is always a top priority. But, we always want to have our cake and eat it too. This cake just might be the proper compromise!

Weekly Favorites 01/13/19 to 01/19/19

I've been slacking a again lately and haven't been as good about delivering you fresh content! I am so
Weekly Favorites
behind, that this is the Weekly Favorites from 2 weeks ago! Better late than never, let's get started!

I've always loved Greek food, I can't get enough of it! Can't wait to try out this lemon rice and lemon marinated grilled chicken!

I can't get away from curry! I'm still trying to find all I can about it! I haven't done a red curry yet, and this slow cooker red curry chicken looks and sounds amazing!

I'm going to be bold and say this may be the ultimate appetizer! What better way to make something that will please everyone than to combine cheese and bread? And, you don't need any extra utensils to serve it!

Have I told you about my cheesecake obsession? I went a while there in college looking for the perfect cheesecake recipe and would get mad if it cracked in the middle. We even had cheesecake at our wedding! I've been able to come to terms with cheesecake obsession, but I still love a good one!

Normally, when I see fried rice, it's chicken, beef, maybe pork, or vegetable. If there is shrimp or seafodd fried rice, it is usually a special. So, to see someone share a recipe for prawn fried rice is a real treat. I'll have to try to sneak this in to the menu someday soon!

Weekly Favorites 06/17/18 to 06/23/18

Weekly FavoritesTime for another batch of favorite food and restaurant articles! This week, we go from chicken fajitas, to a vegan, no bake chocolate cheese cake!

Chicken Fajitas - via The Indian Claypot

I've never been shy about my love for fajitas. So when a new recipe option comes available, it is sure to catch my eye! This one is an Indian fusion recipe!

Chicken Braised with Lemon, Sage, and Olives - via Villa Sentieri

I love olives. No, really, I may have a problem! Sometimes my salads are olives with a side of olives! This chicken sounds almost perfect with lemon, sage, and of course, olives! I can't wait to try this one out!

Spaghetti with Smoked Trout Carbonara - via The Pasta Project

One of the things I love about the Weekly Favorites series, is that it helps me find inspiration for foods I might not have otherwise tried or conceived! This Smoked Trout Carbonara is one of those! I would have never thought to combine smoke trout with pasta! I will have to add this to the list of things to try!

No Bake Chocolate Coconut Cheesecake - via Game of Cookies

At first, I wasn't sold on this cheesecake recipe. I'm a bit of a purest when it comes to cheesecake and the idea of a no bake didn't quite appeal to me at first. But then, two things struck me! The flavor combination of chocolate and coconut have been steadily growing on me. Also, my wife has been trying to avoid dairy, which means if I make a cheesecake at home, I'm basically baking for myself. Maybe that's not such a bad thing! So maybe, this no bake, vegan cheesecake could make for a compromise!

Weekly Favorites 02/04/18 to 02/10/18

Weekly Favorites
It's been a slow week around here. I only found a couple articles that piqued my interest!

Mountain-top Dining  via Colorado.com

I've always loved the mountains and everything associated with it. I even took a year off in school and moved to Estes Park, CO. So mountain-top dining is right up my alley. There's just something about warming up inside over a meal while the snow falls outside that is just about perfect.

Bourbon Salted Caramel Cheesecake with Pralines - via Garden & Gun

I Think Cheesecake Pretty Much Speaks for Itself

Paris
Paris 2012
We all have recipes we're fairly proud. My cheesecake recipe is one of them. I grew up with a friend down the street whose mom would always have a cheesecake made, and sometimes she would make a second one just for me. We would put that pre-made canned cherry pie filling on top of. Looking back, that part wasn't that good, but that was before I really discovered great food.

For our wedding, we were trying to go low budget and had a friend of a friend bake some cheesecakes. They baked them ahead of time and brought them in a cooler. I looked for a picture of the wedding cakes or maybe even us at our wedding, but all I could find was this one from our trip to Paris for our 4th anniversary.

For her birthday this year, Jessica asked me to make a cheesecake for her party. I was more than happy to.

The recipe:

For the crust:
1 1/2 Cups cinnamon-sugar graham cracker crumbs
2/3 Cup unsalted butter - melted
1 Tbsp sugar

Combine. Spread the mixture on the bottom of a spring form pan. Press the crust down with your fingers, making sure to spread evenly. Bake at 350 degrees for 10 minutes.

**Note: I have found that spring form pans leak, no matter how good quality they may be. Place the spring form pan in a sheet pan to avoid a mess in your oven,

For the filling:
16 oz cream cheese
2/3 Cup sugar
1 Cup plain Greek Yogurt
4 large eggs
1 egg yolk
1 1/2 Tbsp vanilla
1/2 Cup heavy cream (you can also substitute 1/2 cup of plain Greek Yogurt in place of the heavy cream)

Combine ingredients in the order listed, letting mix well in between ingredients. You may have to scrape the bottom of the mixing bowl to make sure everything is well mixed. Pour in to the spring form pan with the crust. Bake at 325 degrees for 40 minutes. Turn the oven off and let cool overnight in the oven with the door closed. This will help to minimize settling. Chill before serving.

Cheesecake
Slice of delicious cheesecake. Fruit optional.
