Weekly Favorites 12/22/19 to 12/28/19

Weekly FavoritesAs you may have guessed, last week was pretty busy with family visiting for the holidays. So, I decided to take the week off from the blog. This, week I'm back with a new Weekly Favorites to start!

This week, it's all about cake!


Peanut butter and chocolate are a classic combination that were meant to be together. Look at that Peanut Butter Chocolate Cake!

I remember being somewhat of a gluten for Swiss Cake Rolls when I was a kid. This spice roll reminds me of a pumpkin roll my wife makes!

I've never seen a pizza cake before, but I think I'm in love!

I'm willing to overlook the fact that these are keto brownies, simply because the look amazing! Combining cheesecake and brownies is brilliant!

Give me some of these and some sushi, and I've got a meal. Something light and delicious!

I have never had one of these, but they look amazing!  I'm putting together my Christmas menu this week!

A blog devoted to pizza is something I could get behind! I don't think I ever met a pizza I didn't like!

Oreos and milkshakes are two of my favorite things. Putting them together might create one of my new favorite things!

Weekly FavoritesI hope everyone had a great Thanksgiving break! I took a mini vacation with the family and am just getting back in to it. Here are the Weekly Favorites, if only a day late!

Spicy Chicken and Mango Salsa. A match made in heaven throw in some flour tortillas and you've got yourself a good night. 

I still can't get behind the instant pot craze. I've heard all about their many benefits. I just can't do it. It took me years to get behind the crock pot. All that said, this Italian Beef Sandwich looks pretty amazing!
I've always loved frosted gingerbread, especially around the holidays. These cupcakes may be something I'll have to make for the kids.


I realized that I talked about pizza last week, but let's be honest, I love pizza. There is no wrong to make it or eat it. As out in left field as this pizza may be, it looks damn amazing!

Pizza is great for breakfast, lunch, or dinner, and it doesn't even have to be on a bagel! I'm not in college anymore, and even today, one of my favorite breakfasts is still cold pizza!
If anyone ever wants to argue that they don't like chocolate, be afraid. be very afraid!

There really is no wrong way to eat pizza. I'll even eat it with pineapple. You know, the Hawaiian way!

Sweet potatoes are the perfect fall flavor. Paired with chicken, it is amazing! Fall is not as far away as seems, so now is the time to start planning your favorite meals!


I'm not gonna lie, I love chocolate! These finger biscuits remind me a madelines, and dipped in chopped in chocolate that has to be amazing!


This sounds pretty good, but better than pizza? I'll have to try it out for myself!


There's a reason why just about every BBQ restaurant has banana pudding. It is so good! Replacing the vanilla wafers with the chessmen cookies is genius!

I have always been a huge fan of pizza! But my go to has always been the thin crust Italian style neopolitan pizza. But, as they say, a picture is worth a thousand words, and I had to immediately stop and take a look at this delicious looking Chicago Style Deep Dish!

It looks like I am continuing my quest to learn about curry and Indian style foods, and I am continuing to learn that I have a lot to learn My wife has always liked Chicken Tikka Masala, so maybe I can make this for her!
Raspberry and cream go so well together, especially on a hot summer day! These flavors are so cooling! The introduction of coconut sounds absolutely spectacular.

Continuing my education in curry and Indian foods, I came across this recipe I had never heard of before! Of course, I love chicken and I'm developing more and more of my curiosity of curry, so this recipe is a home run!

My wife has been trying to remove dairy from her diet as much as possible. This has lead me to look at recipes that have dairy alternatives in them. The coconut sauce with these spiced green beans could be just the thing to try!

I'm always drawn to something new that I think that my kids just might eat, even if there is fight to get there! They have tried curry and liked it. They always ask if we are having rice with our dinner. So maybe if I put them together?

I didn't realize until this last article, that this week's post was heavy in all things coconut and curry! So why not close it out that way. Coconut shrimp is one of my favorite ways to make and eat shrimp. Add some curry in there, and it's a really good thing going!

We make our fair share of pizza around here and I have to say these are our some very good tips to making better pizza at home. I especially agree with using the ingredients sparingly. One of our favorites to make lately doesn't use cheese, but has spinach pesto and roasted chicken instead!

Nothing says Southern, quite like cornbread. I've found that cornbread is also one of the most hotly debated food items out there. The thing they argue the most about is the addition of sugar. My Grandma Dorothy put it in her homemade cornbread. While I don't necessarily think it belongs, when I follow here recipe I tend to put it in there. Family Reunion in New Orleans

As a family, we've always gathered around food. There have always been the holidays where we have dinner, but that's just what you do. And for the last 20 years or so it has just been the Houston crew. It has been too difficult to get the New Orleans bunch together as our lives have taken us all in different directions.

So last weekend, we did just that. It was a trip we had been talking about taking, but never could get the momentum going. The timing was never right or schedules would never allow. But we all knew there was one thing keeping us from making the trip. It was a request from the last member of older generation in the family and we knew we had to honor it. It wasn't that he didn't want to see us, he didn't want us to see him. That sounds worse than it actually is, or was in this case. My great-uncle, Emmett, had been in the throes of illness and it was his wish that we not see him for fear that we would remember him in his weakened state. The reality is that we will always remember him as loving, kind, funny Uncle Emmett we knew growing up. The Uncle Emmett who used to pull quarters from my ears when I was a child. The time had finally come to make the trip to visit our family. We needed to pay our respects.

So we all loaded up and drove east. So we could all be together and have room to visit, we found a double shotgun house in the Garden District. We had all of the New Orleans family and celebrated the best way we know how. We ate. 



First there was pizza, the best way to satisfy the hunger cravings of a road-weary group of travelers. Magazine Pizza did the trick. Of course we went to the old standby of cheese pizza, but also indulged our cravings with the Margherita pizza and the Mediterranean pizza. We stood around and ate our pizza and learned about what everyone has been up to since we last saw everyone.

The next day, after several pots of coffee, we made it over to the New Orleans Aquarium as another tribute to our family's fallen. Emmett and his wife Louise had helped raise money for the aquarium and Louise had even volunteered there when she was able. On the way to the aquarium, we stopped for lunch, and considering we were in New Orleans, it had to somewhere authentic. We arrived the Creole House and had our fill of gumbo, poboys, local brews, and of course oysters. With full stomachs, we were ready to head over to the aquarium. It was a treat to watch all of our kids react to the fish and make memories just as we had with our cousins growing up. 
After a rest back at the house, it was time for all of us to gather in a room and have a meal together. After, it's the best way we know to honor our relatives who have gone to soon before us. We reserved the private room at Pascal's Manale and shared stories and memories of Emmett. As we talked, the food and drink came and went until it was time to be on our way. We all gathered just a little longer at the house to wind down and catch up just a little more, until soon it was time to say our goodbyes.

Sunday morning we hit the road, but not without making one last stop. We couldn't leave New Orleans without a proper breakfast. We stopped off at Morning Call for beignets, cafe au laits, and some live music. My youngest couldn't get enough of the street performer just a stones throw away from us. After we had our fill and let the kids run around City Park, it was time to head west.
