This inspiration for this recipe comes from two different places. First, when I was in college, I used to make a Radicchio and Endive salad. I can't find endive at HEB no matter how hard I look, so i don't make that one anymore. The second is from Thanksgiving when I was about 16 years old. My cousin
brought a blue cheese stuffed pear salad, and I have been obsessed with that flavor combination since. So, I put the two together.

The Recipe:

The Tools:

  • Sharp knife
  • Large Bowl

The Ingredients:

  • 1 Head of Radicchio - Chopped
  • 2 Pears - Sliced or Chopped
  • Blue Cheese Crumbles
  • Salt and Pepper
  • Green Onions - Chopped
  • Olive Oil
  • White Balsamic Vinegar

The Method:

First, chop all of the veggies. For the radicchio, I like to cut it into fourths and cut out the white center part. For the pears, I stand the pear up and cut all for sides off around the middle. This is the best way I have found to get the core out of the pear. From there, cut the fourths into slices. For the green onions, I usually cut off just a little bit of the end. Chop the green onions until you use just a little bit of the white part. 

With all of the veggies chopped, combine in a bowl and add the blue cheese. I didn't measure it, but I like blue cheese, so I used a lot. I'll let you decide how much. Season with salt and pepper and drizzle the oil and vinegar on top. 

I paired this with a perfectly grilled steak with blue cheese crumbles on top.

A bahn mi might be the closest thing to heaven we'll get! When I'm in a pinch for a quick bite for lunch, it's definitely my go to. I have a spot not too far from the office.
I've been really in to salads lately. I think it's mostly a guise for healthy eating. 

Did I mention the guise healthy eating? This is what I really want. This is amazing! I grew up on peach cobbler that my grandma made.

This is almost flavor overload for me! The marinated steak, avocado, and everything else! Going to have to make this!

Spinach and Chickpea Salad

One of my problems with "healthy" food options is that they always leave me hungry. It just seems like there is no substance to them. A while back I found this recipe on active.com and it turned out to be really good and filling. It is a great source of iron and protein, making it a great salad to enjoy after a workout. I have added a few ingredients to it over the years, but it is still mostly true to the original.


The Recipe:

The Tools:

  • Large Bowl
  • Citrus Reamer
  • Pot

The Ingredients:

  • 1 Package of Spinach
  • 2 Boiled Eggs - Chopped
  • 1 Can of Chickpeas (Garbanzo Beans) - Rinsed
  • 1 Large Lemon - Juiced
  • Olive Oil 
  • Salt and Pepper

The Method:

Probably one of the best things about making a salad, is the simplicity. That stays true for this one. First, boil water the eggs. This usually takes about 10 to 12 minutes. I like to put the eggs in when the water is cold. It seems to cook the eggs more evenly and faster.

Once the eggs are done, combine all of the ingredients in a large bowl. Drizzle with lemon juice and olive oil. Season with salt and pepper. Stir to combine.

Some of the ingredients I've added over the years include feta, green onions, tomatoes, olivers, capers, and feta.

Super Bowl is just around the corner, and I'm willing to bet you'll be going to a watch party where you'll be expected to bring something. Looks like one of these will be my choice to take with me.
I've been really in to salads lately. I need to be. I need to be eating healthier. I've been finding myself more drawn to pictures of salads too!


Two of my favorite vegetables together, sweet potatoes and brussels sprouts. This doesn't look like a salad I could get the kids to eat, but I may have to make this to bring for lunch some day!

I love spice mixes, especially the ones that don't from a jar. I always like to make spice mixes at home to control the flavor and ingredients.

I really need to start eating better. The trouble is, a lot of healthy food just doesn't sounds good to me, most of the time. This Couscous Salad on the other hand, sounds like something I could without hesitation. Maybe it's the fact that the salad in the picture is smothered in feta, a small weakness of mine. Either way, I am going to be eating this!

Look, if you haven't tried out the reverse sear method for grilling steaks, you need to stop waiting on get right to it. I was hesitant at first. Steaks are expensive, and I really didn't want to through money away with an unfamiliar cooking method. As long you as you a decent grasp of grilling meat or cooking them in a pan over the stove top, it's hard to mess this up. It's all about indirect heat anyway. Shakey Eats even gives it an added shot of butter if you needed any extra coaxing!

This is cool. I've been a fan of these guys for as long as I can remember. Opening their new location was a big deal back in 2009, and they have continued to grow it. Now, with another expansion with a beer garden right next door, this is just another reason beer travelers and tourists to stop by and check out the brewery!

4 Recipes Using a Rotisserie Chicken - Chicken Salad

Lately, I've been looking for ways to make dinner prep a little easier. So I decided to put together a series of 4 recipes using a rotisserie chicken, something that can be picked up at the store on your way home from work and then combined with a few simple ingredients that may already be in your kitchen. The last recipe in the series is Chicken Salad.

4 Recipes Using a Rotisserie Chicken - Chicken Salad
Chicken Salad

The Recipe:

  • 1 Cup Chicken - Cubed
  • 1 Cup Grapes - Halved
  • 3 Apples - Diced
  • 1/2 Cup Slivered Almonds
  • 1/2 Cup Celery - Diced
  • 2 Green Onions - Diced
  • Mayonnaise
  • Salt and Pepper

This Chicken Salad is by far the easiest recipe of the series. Just combine all of the ingredients and bowl. I don't measure the mayonnaise. For me, it's a consistency thing. I add a little at a time until everything is combined. The mayonnaise serves more as a binder than as a flavoring ingredient. If there's too much, it just tastes like mayonnaise. The chicken should still the star. Season to taste with salt and pepper. I like to serve mine as a sandwich on toasted bread. It goes well on a bed of lettuce too!

Some nights we just don't feel like cooking. Every week, we try to add at least one meal that requires almost no prep. We can just come home and put it together, so we can relax and enjoy the rest of our evening together. This week, we made Greek Pasta Salad.





Here's what you'll need:



Grilling Chicken
We grilled some boneless chicken breasts this time,
but it will make this even easier if you use a grocery
store rotisserie chicken.

To make this recipe even easier, there is no measuring involved. A box of pasta, however much chicken we have in the fridge, it doesn't matter how much or how little of each ingredient goes in. I'm a bit of an olive junkie, so I do go heavy on the olives. We like to use the olive mix from the store that comes with feta cheese so we don't have to buy an extra ingredient. Mix everything together in a bowl. Add salad dressing to taste. This week we added some avocado to mix it up a little.

Variations on Vinagerettes

Here lately I've been noticing that some of my clothes aren't fitting like they used to. So it looks like it's time to start eating a little healthier. One of my favorite ways to eat healthy is salads. Salads can get a bad rap for being heavy in calories, but if you pay attention to what you put in them, and on them, it's easy to to keep that calorie count down. Here are a couple of simple and easy to make variations on vinaigrettes. If you've never made a vinaigrette before, don't worry. They are mostly variations of a base recipe. I'll start with the simplest and work through to the more complicated ones. 


Balsamic Vinaigrette
  • 1/4 Cup Balsamic Vinegar
  • 2 Tablespoons Brown Sugar 
  • 4 Garlic Cloves - Minced
  • Salt and Pepper 
  • 3/4 Cup Olive Oil

In a large bowl, combine Balsamic vinegar, brown sugar, garlic, and salt and pepper. Slowly drizzle in the olive oil, whisking constantly. first only drizzle in a little bit at a time. As the oil and vinegar begin to emulsify, you can pour the oil in a little faster.

  • 1/4 Cup Red Wine Vinegar
  • 2 Tablespoons Sugar
  • 4 Garlic Cloves - Minced
  • 3 Roasted Red Pepper Slices from the jar - Minced 
  • Salt and Pepper 
  • 3/4 Cup Olive Oil

In a large bowl, combine red wine vinegar, sugar, garlic, red bell peppers, salt, and pepper. For the red peppers, I just use the jarred variety. Slowly drizzle in the olive oil, whisking constantly. first only drizzle in a little bit at a time. As the oil and vinegar begin to emulsify, you can pour the oil in a little faster.


Taragon and Lemon White Wine Dijon Vinaigrette
  • 1/4 Cup White Wine Vinegar 
  • 2 Tablespoons Sugar
  • 4 Garlic Cloves - Minced
  • 1 teaspoon Taragon
  • 1/2 Tablespoon Dijon Mustard 
  • Juice of 1 Small Lemon
  • Use a squeeze bottle to help control the oil flow

    At first it will just just drip out, which is all you need. 
  • Olive Oil


In a large bowl, combine white wine vinegar, sugar, garlic, lemon juice, dijon mustard, taragon, salt, and pepper. I like to use a course grain mustard, but some people like to use something with a little less spice to it. Slowly drizzle in the olive oil, whisking constantly. first only drizzle in a little bit at a time. As the oil and vinegar begin to emulsify, you can pour the oil in a little faster.
These dressings store really well in mason jars in the fridge. Pull the jar of dressing out as you begin to prep the salad to give it a chance to come to room temperature. Give the jar a shake to mix it up and pour over the salad.
