Weekly Favorites 12/29/19 to 01/04/20

Every Saturday, I go through Twitter with #foodblogger and find my favorite food related articles. These are this week's favorites!


You really can't go wrong with braised beef, no matter what cut it is. Add in the apples and you've got a good thing going. Apples are one of my favorite fruits to cook with different cuts of meat, to get a good sweet and savory contrast.

This is really interesting. We make Beef Stroganoff at home about once a month. I may have to try this one, with only mushrooms. The rice is a nice substitute for the carb heavy pasta.

I like trying different ways to make cauliflower to keep it fresh and interesting. Think mashed cauliflower for instance. This roasted cauliflower is going to have to be one we try out at home too!

Reducing waste, not just food waste, is something we have been looking at at our house for at least the past year. Composting, limiting paper towels, recycling, cooking smaller portions. These are all things we've tried at home. What are you doing to help reduce food waste?

Weekly Favorites 02/03/19 to 02/09/19

I have never met a red Red Velvet Cake I didn't like. So, just in time for Valentine's Day, I came across this recipe for a beautiful Red Velvet Cake!
Full disclosure, I tried to resist, but I have found myself on board with the avocado toast trend. So much so, that I have tried a few different variations. This one with burrata and Wiltshire ham, looks amazing!

This Strawberry Panna Cotta will make another great dessert just in time for your Valentine's Day celebration!

A few months ago at a barbecue restaurant, I had a marinated tomato salad. It was delicious! This Heirloom Tomato salad looks like a great place to start trying to recreate it!

You'd think being from Texas, I'd have a solid chili recipe. I don't. I have tried out a few. I used to make one with re-hydrated ancho chilies. It had a bit of southwestern flavor! I can't wait to try this one out!

When I came across this fried cauliflower, I mistook the picture for fried chicken! Looking at the recipe, I realized that it was cauliflower! The more I read the recipe though, the more I realized how delicious this can be!

I don't normally look at meal plans or anything like that. At least, not in the past. Things have changed around here in the last few weeks with the arrival of a new baby! We've had some generous friends bringing us meals a few nights a week and we've managed to live off of the left overs, but I imagine before too long we'll have to start taking care of ourselves again!

Veggies and Picky Eaters

When you have a two-year-old and a one-year-old at home, dinner time can be tricky. The kiddos tend to get stuck on a steady diet of ham and cheese, fruit snacks, and mac and cheese. While we do our best at home to buy organic and natural food, even fruit snacks, there comes a point where a little bit of variety and healthy options need to come in to play.

The other night, we decided to make some meatloaf and mashed potatoes, the old classic, but wanted to have something a bit more nutritious for the kids. Something that my wife and I have played around with in the past is steamed cauliflower, mashed to mimic mashed potatoes. The kids seem to like it, if they only tolerate it.

For the cauliflower:

Place a steamer basket in a pot with enough water to fill the pot without touching the bottom of the basket. Place the lid on and allow some steam to build up. Cut the bottom off the cauliflower and remove the stem. Place in the basket and cook until tender. It typically takes 10- to 15 minutes. Mix in a bowl with a few spoonfuls of cream cheese and a splash of milk, salt and pepper. You can add a tablespoon or two of butter as well. Mash it up with a potato masher, or puree it to get a smoother consistency.

We served this with meatloaf and some sauteed mushrooms and carrots. It goes great steaks and chicken too.
